「さつまいものきな粉和え」

 さつまいもの栄養素をそのまま生かし、きな粉がタンパク質をプラス!きな粉の原料である大豆は、抗酸化作用のある成分を含む上、食物繊維も豊富で、さつまいもと組み合わせることで糖化対策に!優しい甘さで心も身体もほっこりする1品です。

材料2人分

さつまいも:1本(約200g〜250g)、きな粉大さじ4、砂糖大さじ1/2、塩少々、バター10g

作り方

1. さつまいもは皮ごとよく洗い、1〜1.5cm厚さの輪切りにし、さらに2等分か4等分の食べやすい大きさに切り分ける。(栄養を逃さないよう水にはさらしません)
2. フライパンにさつまいもを入れ、水100cc程度注ぎ蓋をして弱火で10分程度蒸す。
3. さつまいもが柔らかくなったら余分な水分を飛ばし、バターを入れて全体に絡める。
4. 袋にきな粉、砂糖、塩を入れて混ぜ、3を入れてきな粉を全体にまぶす。
5. 冷蔵庫で冷やすとさつまいものレジスタントスターチがアップします。
